Cake Strips vs No Cake Strips

I once thought that cake strips were just a gimmick until I read that Rose Levy Beranbaum used them.  The cake on the left is an 8″ that was baked with Wilton Bake Even Strips and the one on the right is a 6″ baked without.  The cake on the right dome slightly but also had that ugly rim.  I didn’t even need to level the one on the left.  So, I’m sold.  I will tell you the first time I tried them I didn’t let them soak long enough so they didn’t work.  Now I soak them for at least five minutes and then just drain the excess.
