Macaron Journal: Experimenting with Oven Temp and Drying

Same batter but set the convection oven at 400F.
I turned the oven off right before I put in the tray and let them dry for 7 minutes. I then turned the oven on 365F for 7 minutes.
They were already rising by the middle of drying time so the heat was too high and I didn’t vent the oven between batches so it was probably even higher than I expected.
You can tell that the right side of oven is much hotter.
I think they need to dry @ 375 then bake at 365 or maybe as low as 325-350F since the feet were already spreading before the temp ever got to 365
