I wrapped this one in modeling chocolate which is so easy to work with especially if you’re working in stages. I covered the top then stuck it in the fridge while I picked up my daughter from school. Two hours later I paneled the sides and finished the decorations. The other great thing about modeling chocolate is that I made that collar and it was ready to go in less than an hour. When I made my first lab coat cake with fondant/tylose the collar had to dry overnight to hold its shape.
