My husband keeps asking me to make an Eclair Macaron which sounds interesting but in the meantime we had a pate choux day. I have made eclairs and cream puffs many times before but I learned some new techniques from a fantastic class I took on called “French Pastry Classics” taught by Colette Christian.  I made 24 eclairs and had leftover pate choux batter so made some gougeres which are amazing and amazingly simple.  My husband kept teasing me every time I said “gougere” but soon ate his words when he tasted one.  Between Sophia, Sandor and Stephen they were gone in about 10 minutes.
