Earl Grey Macarons with Lemon Curd filling

I have tried various techniques to get those pretty white macarons that I have seen on the internet.  These are my Earl Grey macarons that definitely go into the oven white but come out beige.  I can tell you that if you have a top heating element in your oven it does help to put a pan on the top rack.  That prevented the edges from browning but it did not keep them white.  I sent a few pictures over to Stella Parks at www.bravetart.com who said they were not too dark at all! So, that makes me happy.  I just can’t leave the macarons in the oven for any less than 18 minutes without it being undercooked inside.  For now, I’m happy with the beige.
