I’ve been dying to make madeleines but couldn’t quite justify buying yet another specialized baking pan. I don’t know about you but I keep a running list of baking items I “need” on Amazon for those who want to find me an extra special gift for holidays and birthdays, etc. Turns out the only person who ever looks at that list is DH and that is why I love him so much.  So the madeleine pan was on there for a while until I found one on clearance at HomeGoods and then I rushed home to make them.  Madeleines are like tiny super flavorful cakes that melt in your mouth.  There are so many ways you can flavor the glaze.  After I tried a traditional lemon version I made another batch with five-spice powder and pomegranate juice.  I encourage you to get a pan and start making madeleines!
